Monitoring solutions for winegrowers
Monitoring fermentation, maturation, harvesting and every stage of the winemaking process has now become mandatory for meeting inspection and tracking requirements.
Onafis has designed solutions geared to your profession that safeguard every step, improve your energy management, optimise your production processes and offer a more comfortable working environment.
Fermentation monitoring
Don’t discover a fermentation incident too late
Between two manual readings, a fermentation that slows down or stops can go unnoticed for several hours — with a direct risk to the quality and aromatic profile of your wine.
- Track fermentation kinetics in real time, without moving
- Get an alert as soon as a deviation appears, before it costs you a batch
- Link monitoring to your temperature control for automatic correction
- Save time on manual readings and sampling
The solution: Densios, our automatic floating density meter, immersed directly in your tank.
Fermentation probes
Densios Reds
A stainless steel casing is fitted to your tank, isolating the sensor from the must and thereby allowing it to measure density and temperature reliably.

Density
Densios Whites & Rosés
The sensor floats freely in your tank to measure its density and temperature.
A mobile fastening system can be added for ease of removal.

Mapping
Using winery mapping, identify its micro-climates, understand and control your winery environment in order to optimise evaporation loss and save on energy usage.
Microbiological monitoring
Brettanomyces contamination or microbiological drift progresses with no visible sign during maturation — by the time it’s detected by smell, the batch is often already affected. With the world’s first microbiological risk detection system, secure your maturations and receive an alert at the very first signs of drift.

Dissolved and gaseous oxygen
An invisible drift, until it’s in the glass
Oxidation, contamination, abnormal evaporation: during maturation, these deviations progress with no visible sign and become costly once revealed during tasting.
The B-Evolution probe is fitted with over 7 sensors including a luminescence sensor, approved by the CEA and several research laboratories. It reduces manual interventions (sulphiting, topping up) through optimal, automatic control of your wines’ development and maturation conditions.
Beyond temperature, dissolved gas, volatile gas and humidity readings, you benefit from our i-RDM data intelligence for early warning when a contamination risk is detected — proactive monitoring that significantly reduces your labour and analysis costs.

Map your winery and control the environment
Without visibility into your winery’s micro-climates, a zone that’s too warm or too humid can affect your batches without you realising it until tasting.
Onafis’s B-Atmos probe measures the winery environment as well as the wine’s development during maturation. Receive mapping of your winery to better understand micro-climates and optimise your cellar. Beyond the climate report, manage your cellar’s environment (temperature and humidity) using the wine itself.
Results show an estimated 30% saving on our customers’ expenditure and a gain of 10 tonnes of carbon dioxide equivalent, or more than 5,000 m3. This volume of CO2 is equivalent to 2 Olympic-sized swimming pools, or 167 tanker trucks, 1 million footballs, or 22,222 barrels of wine at 225 litres each. By automatically managing your winery’s air-conditioning, you commit to a CSR approach built on quality and safety.
Do Onafis solutions need to be calibrated?
With just a quick glance at my smartphone, I was able to watch fermenting tanks remotely without always being in the winery.
I used to get someone to take density readings for each barrel twice a day. Now, I have a density monitor in my pocket, which really saves time and provides peace of mind.
Data fed into graphs hourly promotes a more proactive approach to fermentation management by identifying slower or stuck fermentations quicker, for example.
Frequently asked questions
Perhaps we can answer your questions
Do Onafis solutions need to be calibrated?
Onafis has secured approval for its technologies from CEA Tech. Stress tests have approved their lifespan of 10 years without the need to recalibrate the measurement tools.
Our first customers have now been using our products since 2020 and have not needed to calibrate their ONAFIS solutions.
How long is the equipment guaranteed?
The equipment is guaranteed for life. As long as the ONAFIS licence/maintenance is active, your equipment is guaranteed and remotely monitored by our supervision staff.
Does the equipment work if I don’t have any connectivity in my cellar?
Onafis conducts an audit before any installation to provide you with support for your connectivity and guarantee a high degree of accessibility for your connected tools.
Onafis also provides router solutions and IoT boxes tailored to your conditions to guarantee and secure your connectivity. We’ve got you covered!
I know nothing about IT, will my staff and I struggle to use your software?
We provide assistance at every stage of design integration, training and day-to-day usage including setting the warning alerts for problems. All our tools have been designed with men and women out in the field so that the data comes to you and you don’t have to look for the information.
The alerts can be set based on your methods and your needs. They can be received in the way you choose – by email, notification or text message.
